Creamy Olive Oil Thyme Citrus Cooler

  • 1 lemon, skin on (so buy organic and/or wash really well!), seeds removed (don’t stress on it, do as much as possible)
  • 1 orange, preferably organic, skin on, seeds removed
  • 3 sprigs fresh thyme, thick stems removed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • pinch of fine grain sea salt
  • 2 cups cold water


  1. Blend all ingredients in a blender until smooth.
  2. Strain through a fine mesh strainer.
  3. Shake it with ice, then pour into cocktail glasses. Garnish with a swirl of olive oil and citrus peel or dried citrus, if desired.
