5-Minute Grain-Free Breadcrumbs (Dairy-Free, Refined Sugar-Free, Vegan)

You know the TikTok-inspired idea of romanticizing your life? Well I’m all for it—why wouldn’t we want to live our lives as if we’re the main character? To me, it means being intentional about living the life I want to and I try to do that in all aspects, including—you guessed it—when it comes to the food I’m making (and eating). Yes, I’m all about about quick and easy healthy recipes, but if taking five extra minutes means the difference between a great meal and a REALLY great meal, you can bet I’m taking those extra five minutes. These 5-Minute Grain-Free Breadcrumbs are so incredibly delicious, you’re gonna want to put them on EVERYTHING.

They’re crunchy and add the perfect pop of flavor to soups, pastas, roasted veggies…or you can just eat ‘em plain by the handful like me because I’m truly addicted. The best part is that by spending the five minutes to make them, you can literally change the game for all the savory dishes you’ll eat that week—just make sure to store the breadcrumbs in a tightly sealed container in the fridge and they’ll last for up to a week (assuming you don’t eat them all before that!). So what are you waiting for? It’s time to be the main character.

How to make grain-free breadcrumbs

Besides taking mere minutes to whip up, these grain-free breadcrumbs also only require five ingredients (and if you count salt and olive oil as obvious givens in a recipe that don’t count as real ingredients, then it’s only three!). Here’s how to make ’em.

  1. Pulse pecans, garlic, and salt in blender or food processor until the mixture is the texture of coarse sand.
  2. Add mixture to skillet along with olive oil and maple syrup.
  3. Sauté over medium heat until fragrant and golden, about 5 minutes. 

That’s it! You want to pulse the pecans until they’re breadcrumb like texture—I like a few rustic larger pieces! A few pulses will do. Don’t go too long or it’ll get clumpy (and then eventually turn into nut butter, which sounds delish but is not the goal here).

Also, I love to add lemon zest (about 1/2 a lemon for the amount in the recipe), but fresh thyme or oregano would also be amazing, and you can also leave out the extras and let the garlicky flavor shine—just follow your heart.
