When you’re looking for a non-alcoholic drink to cool off this summer, this homemade frozen
strawberry daiquiri is made with just five ingredients to deliver a refreshing vibe in no time flat. Here’s what you’ll need to make it and exactly why it’ll boost your microbiome health:

Fresh strawberries: rich in polyphenols known as hydroxybenzoic acids, which, when metabolized by colonic bacteria, create beneficial metabolites. Since we’re not straining, we still have all the fiber that gut microbes love to feast on.

Fresh ginger: adds a fresh kick and has been shown in research to increase the diversity of gut
microbiota, alleviate bloating, gas, and nausea, and even help alleviate constipation.

Coconut milk: contains lauric acid that can fight viruses and bacteria, and offers the creamiest,
prettiest swirl.

Lime juice: a great source of Vitamin C and a natural immune-booster, lime juice is also a staple
ingredient in traditional strawberry daiquiri recipes.

Honey: we get natural sweetness from honey which is shown to be good for indigestion since it
doesn’t ferment in the stomach.

How to make a homemade strawberry daiquiri

The only tool you’ll need to make this delicious frozen mocktail is a blender or food processor. You’ll simply blend strawberries with ginger, honey, lime juice, a bit of water, and a pinch of salt. This will make a thick mixture that’s barely pourable, and that’s what we want! Then, you’ll add coconut milk into a liquid measuring cup so that you can pour just a bit of coconut milk at a time into two aesthetically pleasing drinking glasses. This is how we create the swirl affect. Next, you’ll add a little strawberry daiquiri mixture on top of the coconut milk, and the rest of the coconut milk, and then the rest of the daiquiri mixture until it’s divided evenly between the two glasses! You can use a spoon to gently swirl the colors together and enjoy!

Can I add alcohol?

Of course! You can easily customize this virgin strawberry daiquiri into a healthy frozen drink by adding a shot of your favorite liquor. I think rum, tequila, or mezcal would taste amazing! You’ll still get plenty of digestive benefits even when you sneak a little alcohol in there.

Swirled Virgin Strawberry Daiquiri

Ingredients

Scale
  • 1 10-ounce bag frozen strawberries
  • 1 thumb sized piece of peeled fresh ginger
  • 1/4 cup honey
  • 1/3 cup lime juice
  • a pinch of salt
  • 1/3 cup water
  • 2/3 cup of canned coconut milk

Instructions

  1. In a blender or food processor, blend strawberries, ginger, honey, lime juice, salt, and water until smooth. If it needs more liquid, use more water, a splash at a time, but mixture should be THICK and barely pourable.
  2. Pour coconut milk into a liquid measuring cup. Pour a bit of coconut milk into 2 glasses, then add a little daiquiri mixture, the rest of the coconut milk, then the rest of the daiquiri mixture.
  3. Use a spoon to gently swirl the colors together. Serve frozen & enjoy!
