There are some breakfast recipes that are healthy at their core (ahem – green smoothies). And then, there’s healthy breakfasts that, thanks to fast food restaurants, have a bad reputation of being bad for you (ahem – breakfast sandwiches). But, starting your morning with healthy fats, fiber, and fresh greens is always a good idea, and breakfast sandwiches can 100% deliver on all of the above (and taste dang good while doing it). So, I decided to work on their reputation a bit and prove to you that a healthy breakfast sandwich can totally be super delicious at the same time. Enter: The Best Effing Breakfast Sandwich and it’s delicious, dairy-free, Herby Avocado Aioli. Prepare to swoon.

What’s in this healthy breakfast sandwich?

Like all the best things in life, the Best Effing Breakfast Sandwich is messy af. She’s a little high brow (all those herbs!!), and a little Trader Joe’s. She’s also incredibly easy to make. ⁣The base ingredients of your average breakfast sandwich already show a lot of promise (why ruin a good thing, IMO), so the Best Effing Breakfast Sandwich’s ingredients aren’t that different than what you’d expect to find on an a.m. sammie:

  • English muffins: I opt for whole grain or Ezekial english muffins for the high fiber content. If you’re gluten-free, the brown rice english muffins in the frozen section of your grocery store work too.
  • Egg: If possible, buy pasture-raised and organic.
  • Frozen hash brown patty: for added texture and deliciousness.
  • Chopped fresh rosemary⁣: to add flavorful antioxidants that support the immune system.
  • Arugula⁣: for the zippy flavor, and health benefits for the heart and the gut
  • Bacon⁣: adds a delicious savory, salty flavor
  • Cheddar⁣ cheese: it gets so melty and delicious.

The fresh rosemary and arugula are what takes this breakfast sandwich BEYOND the average recipe. The arugula gives it that unique zip that only arugula can (while also adding some greens to your morning meal), and the rosemary gives the frozen hash browns a really fresh and gourmet taste, plus an antioxidant boost. To really lean into the gourmet-ness of the Best Effing Breakfast Sandwich, you need the special sauce.

Do it up with this dairy-free herby avocado “aioli”

This delicious, healthy sauce is so easy to make and it will seriously take your healthy breakfast sandwich to the next level. It’s made with:

  • Avocado: a heart-healthy, creamy base for our aoili
  • Basil: a delicious herb that adds anti-inflammatory benefits
  • Garlic: adds so much tasty, aromatic flavor while boosting heart health
  • Lime ⁣juice: for it’s bright flavor that also makes your skin glow
  • Lemon juice: for a bit of natural tartness
  • Jalapeño: for a little kick of heat
  • Fine grain sea salt: to bring out all the flavors

You literally just add all the ingredients to a blender or food processor and blend until creamy, adding 1 to 2 teaspoons of water at a time if needed to reach desired consistency. ⁣That’s it! Smother this healthy aioli all over one half of your English muffin and tell me if you can’t say this is the BEST healthy breakfast sandwich you’ve ever had.

How to make The Best Effing Breakfast Sandwich

Trust me, it looks way more involved than it actually is.

  1. Line a baking sheet with parchment paper and space out bacon. Place in a cold oven and set the heat to 425F. Your bacon should be crispy perfection in about 20 minutes! Place on a paper towel lined plate to soak up excess grease.⁣
  2. While the bacon cooks, make your Herby Avocado “Aioli.” Add all ingredients to a blender or food processor and blend until creamy. Add water 1-2 tsp at a time if needed to reach desired consistency. ⁣⁣
  3. Heat a medium-sized skillet over medium heat. Add a drizzle of oil. Rub the chopped rosemary on your frozen hash browns then add to the pan. Cook until golden brown, about 4-5 minutes per side. Remove from the pan and set aside.⁣
  4. On the same pan, add another drizzle of oil or butter to coat. Cook eggs as you’d like (scrambled, fried, etc). Remove and set aside.⁣
  5. On the same pan, add your english muffin cut side down to get browned and crispy, about 45 seconds. Flip over and add a slice of cheddar cheese. Cover until melted, about 30 seconds.⁣
  6. Assemble your sandwich, adding the Herby Avocado “Aioli” to the other side of the English muffin without cheese then stack on the remaining ingredients. Slice in half, grab a napkin (or 3), and ENJOY!

Best Effing Breakfast Sandwich

Ingredients

For the sandwich:

  • 2 English muffins⁣
  • 2 eggs⁣
  • 2 frozen hash brown patties⁣
  • 1 tbsp chopped fresh rosemary⁣
  • ⅓ cup arugula⁣
  • 4 slices bacon⁣
  • 2 slices cheddar⁣

For the ⁣Herby Avocado “Aioli”⁣

  • 1/2 avocado ⁣
  • Big handful of basil, woody stems removed (about ½ cup) ⁣
  • 1 garlic clove⁣
  • Juice of 1 lime ⁣
  • Juice of ½ lemon⁣
  • 1 jalapeño, pith and seeds removed⁣
  • Big pinch of fine grain sea salt⁣
