My other passion: healthy freezer burritos. This tasty assemblage of vegan breakfast burritos features globally inspired by recipes from Thailand, the Middle East, Italy, India, and South America! If you do meal prep, these breakfast burrito recipes are game-changing. All it takes is roasting some vegetables and beans (toss with oil and spices and walk away!), mix them with a finger-licking, homemade sauce that comes together in less than 3 minutes, and wrap them up in grain-free or whole wheat tortillas and store them in the freezer until meal time! These burrito recipes are all either vegan, vegetarian, gluten free or grain free (depending on your tortilla choice), dairy free, or all of the above.
